Christmas Berry Trifle – Enjoying Christmas without sabotaging your health goals might seem to be difficult. With food and drinks are a common barrier at this time of year, we think it is possible with these tips.
With probably the leading New Year’s resolution being weight loss, why not tick this off the list before you get to the New Year and enjoy a lighter Christmas Berry Trifle
Ingredients
- 160g sponge cake or packet of trifle sponges
- Sweet sherry/cherry brandy to taste
- 1 block of light jelly
- Preferred fruits – strawberries, peaches, raspberries
- Juice of half a lemon
- One tablespoon of castor sugar
- 250ml light custard
- 250ml light cream, whipped
- Flaked/shaved chocolate to garnish
Method
- Make jelly to packet instructions and leave to cool
- Line the bottom of your trifle bowl with slices of sponge cake or trifle sponges
- Sprinkle sherry or brandy over sponges and leave to soak
- Slice up fruit and place in a bowl with lemon juice and sugar and combine
- Leave fruit to marinate in lemon juice and sugar for 5 minutes
- Place fruit in trifle bowl on top of sponges
- Pour over cooled, liquid jelly (made to packet instructions)
- Place dish into the fridge to set
- Once set, pour custard on top in an even layer
- Spoon or pipe cream on top
- Decorate with chocolate flakes/shavings and fruit
